Misschien denk je bij de kop wel: in groenten zitten toch de meeste vitaminen? Dat klopt misschien wel, maar de kwaliteit van onze groenten holt snel achteruit. In de afgelopen jaren is de aanwezigheid van vitaminen en mineralen in bijvoorbeeld andijvie, bloemkool en wortelen fors teruggelopen. Soms wel met meer dan vijftig procent! Dus groenten zijn natuurlijk nog gezonder dan een vette hap, maar niet meer zo gezond als dat we altijd gedacht hebben!

Maar hoe komt dit nou? Vooral het injecteren van mest in onze landbouwgrond is funest voor het teruglopen van het aantal vitaminen. De bemesting zorgt ervoor dat er te veel schadelijke stoffen in de bodem terecht komen. Paul Blokker van de Vereniging tot behoud van boer en milieu waarschuwt ons voor de gevolgen. “De gemiddelde Nederlander heeft een gebrek aan zink, ijzer, selenium, koper, magnesium. En heeft een fors tekort aan vitamine A. Ook heeft één op de drie Nederlanders tegenwoordig kanker.

Dat is veel hoger dan waar ook ter wereld.”
Tomaten en paprika’s zijn nog wel erg voedzaam. Maar ook bij deze kasgroente loopt het aantal vitaminen en mineralen erg terug. Eigenlijk vindt dit in de hele wereld plaats, maar in Nederland gaat het een tikje sneller. Maar wat kun je hier zelf aan doen?

Eerst is het belangrijk te weten waar vitamine A in zit. Dit is namelijk aanwezig in lever, vis, melk, melkproducten en boter. In groenten en fruit zit het niet direct, maar wordt bèta-carotoon in het lichaam omgezet in vitamine A. Ook wordt vitamine A in Nederland toegevoegd aan margarine, halvarine en bak-en braadproducten. Als je een tekort hebt, kun je natuurlijk veel lever gaan eten of steeds meer groente en fruit tot je nemen. Nog beter is het om een bewuste keuze te maken in je groente. Pak vaker een tomaat of een paprika. Of vul je tekort aan met vitaminepillen of supplementen.
